Cake Batter Mug Cake

Is there anything better than cookie dough? Some would argue that cake batter tops it!

As I’ve said before, sometimes you just need a treat. And when on Paleo, or other type of grain-free diet, baking can be tough! That’s why I love it when I come across a recipe that is not only tasty, but easy as well. And when it’s a single-serving recipe, that makes it irresistible! I adapted the recipe and made it even better for my diet.

The entire process takes less than 5 minutes – I made some for both myself and my husband, and he gobbled it up!

Cake Batter Mug Cake (1 Serving)

  • 4 Tbsp. Almond Flour
  • 1 Tbsp. Coconut Flour
  • 1/2 Tbsp. Melted Coconut Oil
  • 1/4 tsp. Baking Soda
  • Pinch of Salt
  • 1 Egg
  • 2 Tbsp Milk of Choice (Almond, Coconut, etc)
  • 1 Tbsp. Honey
  • 1 tsp. Vanilla
  • 1/4 tsp. Almond Extract (optional)
  • 1/2 tsp. Stevia Powder
  • Handful of Enjoy Life Mini Chocolate Chips
  • Sprinkles (Optional)

Combine all ingredients in a small bowl, then transfer into a greased mug. Microwave for 1.5-2 minutes, until cake puffs up and seems fully cooked. Enjoy straight out of the mug, and make sure to have a big glass of your favorite milk with it!

      1. Thank you…happens to the best of us…mommy bran will only get worse my dear friend…I didn’t believe it was a real thing until I got pregnant and experienced it for myself first hand!! Some of the things I do today NEVER would have happened pre-kids!

  3. How could this be made into a CHOCOLATE Cake Batter Mug Cake? My husband LOVES chocolate and I love natural, refined sugar-free (I use stevia, honey, and coconut sugar in my baking), and gluten-free desserts. If you could suggest some ways to make this recipe to fit that criteria, I would greatly appreciate it! THANKS!

    1. I would simply add cocoa powder, and then make sure that there is enough liquid to compensate for the extra dry ingredients. Perhaps a bit more milk, or even applesauce to add liquid and sweeten it a little more!
