Is there anything better than cookie dough? Some would argue that cake batter tops it!
As I’ve said before, sometimes you just need a treat. And when on Paleo, or other type of grain-free diet, baking can be tough! That’s why I love it when I come across a recipe that is not only tasty, but easy as well. And when it’s a single-serving recipe, that makes it irresistible! I adapted the recipe and made it even better for my diet.
The entire process takes less than 5 minutes – I made some for both myself and my husband, and he gobbled it up!
Cake Batter Mug Cake (1 Serving)
- 4 Tbsp. Almond Flour
- 1 Tbsp. Coconut Flour
- 1/2 Tbsp. Melted Coconut Oil
- 1/4 tsp. Baking Soda
- Pinch of Salt
- 1 Egg
- 2 Tbsp Milk of Choice (Almond, Coconut, etc)
- 1 Tbsp. Honey
- 1 tsp. Vanilla
- 1/4 tsp. Almond Extract (optional)
- 1/2 tsp. Stevia Powder
- Handful of Enjoy Life Mini Chocolate Chips
- Sprinkles (Optional)
Combine all ingredients in a small bowl, then transfer into a greased mug. Microwave for 1.5-2 minutes, until cake puffs up and seems fully cooked.
